It’s a popular saying…”I may not have been born in Texas, but I got here as fast as I could”. It pretty much describes me to a T. For my parents, they saw their college-aged city girl turn into a Texas-loving, cowboy boots-wearing girl, right before their eyes when we moved here years ago.
Back then I didn’t know much about Texas. I couldn’t tell you a thing about the rich history or culture. I made fun of Texas accents (only to shortly thereafter develop one myself). And the food, well, that was one area I was bound and determined to figure out. From chicken fried steak to fried okra, I was trying all kinds of new flavors in Texas…and loving it.

But that’s not all, because I’m sharing a Texas inspired recipe, one that my family loves, called Texas Caviar in Bacon Bowls.
I start with the best bacon there is in Texas, Wright® Brand Bacon in the Hickory Smoked flavor!
Why Wright Brand Bacon? It’s made in Texas, of course! Not only that, but they are thick sliced, high quality cuts of premium meat. Delicious!
It was the perfect place to start with this recipe. Though I’ve been making Texas Caviar for years now, bacon bowls were new to me…fun and creative!
Since this was the first time I was making bacon bowls, I began by using the backside of a muffin tin, covering it with tin foil, plenty of it to catch all the grease.
This was my practice round so I was only going to start with making 2 bacon bowls. I cut one piece of Wright Brand Bacon in half and placed them across what would be the bottom of the bowl.
Next, I took one full piece of Wright Brand Bacon and wrapped it around the entire muffin tin area.
Now it was time to bake at 400F degrees for 30 minutes.
Voila…they turned out better than expected!
Next up, Texas Caviar!
2 Cans of Black Eyed Peas
1 Can of Petite Diced Tomatoes
1 Can of Yellow Corn
1 Small Red Onion, chopped
½ Yellow Bell Pepper, diced
¼ cup Chopped Cilantro
½ tsp Salt
½ tsp Ground Pepper
½ tsp Garlic Powder
1 tsp Oregano
6 tbsp Red Wine Vinegar
6 tbsp Olive Oil (does not need to be extra-virgin)
Mix all ingredients together and chill in refrigerator for at least 2 hours.
Serve in Bacon Bowls for extra fun!
