The end of the year brings cooler weather and more family dinners than ever (and not just for the holidays). So I thought it was time to share one recipe that I love to make for bigger dinners, whether a Sunday family meal or Christmas get-together – Easy Corn Casserole! This easy corn casserole recipe was shared by my dear friend Tracy years ago right around the time I got married. It’s been a go-to side dish ever since.
Easy Corn Casserole
First things first. Let’s make sure you have all the ingredients on hand.
What I love most about this recipe (and why I put the EASY in Easy Corn Casserole), is that you can easily have all these ingredients on hand in the pantry and refrigerator. Perfect for those unexpected guests.
Pro Tip –> Other easy pantry friendly recipes include my famous Homemade Chicken Pot Pie, Two-Ingredient Coca-Cola Cake, Coca Cola Slow Cooker Meatballs, and Loaded Corn Dog Muffins.

5 Ingredient Casserole:
1 can whole kernal corn (drained)
1 can cream style corn
1 cup sour cream
1/2 cup melted butter
1 pkg corn muffin mix (I use Jiffy brand)

Corn Casserole Instructions
Mix all ingredients together. Yes, all!
Spray 13×9 inch baking dish with nonstick cooking spray.
Pour mixed ingredients into baking dish and spread evenly.
Bake at 300 degrees for 1 hour 40 minutes or until done in center.
That’s it!
I told you it was EASY! This recipe couldn’t be any easier.
Mix. Bake. Enjoy.

What can you use instead of the Jiffy mix?
good question, as I have only ever made corn casserole using the pre-packaged mix. Barb, I would suggest looking at the ingredients on the box and maybe testing something out.
Iโm wondering if weโre supposed to drain the hard corn ?
Yes – drain the regular can of corn Judy.
