Mom's Pepper Steak Recipe

- Hot Cooked Rice (to serve pepper steak upon)
- 1 lb round steak (about ½ inch thick)
- 2 Tbsp butter
- 2 cloves garlic, crushed
- 1½ cups beef broth
- 1 cup chopped green onions
- 2 green bell peppers, cut into strips
- 2 tomatoes, cut up (diced is fine)
- 2 Tbsp Cornstarch
- ¼ cup water
- ¼ cup soy sauce
- Paprika
- Cut steak into ¼ inch wide strips and sprinkle with paprika.
- In skillet (I use electric), brown steak in butter; then add garlic and broth.
- Cover and simmer for 30 minutes.
- Stir in onions and peppers. Cover and cook 5 minutes.
- Blend cornstarch, water and soy sauce together in small bowl. Add to meat mixture.
- Cook, stirring, until clear and thickened. (about 2 minutes)
- Add in tomatoes and stir gently.
- Serve over beds of fluffy rice!
