Incredible Zesty Chicken Salad Appetizers for Entertaining

My husband just told me the big news. His favorite college football team of all time will be playing in Dallas over the holidays. I’m thinking he’s trying to hint that maybe tickets would be a great surprise underneath the Christmas tree.

Whether they show up (or not – HA!), there is no doubt we will be celebrating with the biggest tailgate ever or entertaining our friends and family at home. What will be on the menu either way? My incredible Zesty Chicken Salad appetizers!

I was a kid who grew up on tuna fish salad. I’m not really the biggest fan, truth be told. So when I grew up and went out on my own, I discovered a few optional dishes like chicken salad. That chicken salad recipe is incredibly simple and delicious, but from time to time it’s good to “give it a zing” or spice things up a bit.

Today I’ll be sharing with you my basic chicken salad recipe, following that up with a little trick to make it a bit spicier and immediately impress your guests.

My secret weapon to spice almost any recipe up – horseradish.

I discovered that Silver Spring Foods has an incredible line of horseradish products, one of which couldn’t be more timely for the season. I’m talking about the bright and colorful Cranberry Horseradish. You need this in your life right now, trust me.

The Cranberry Horseradish is so vibrant that it makes any recipe dish pop with color and taste.

I can envision so many ways to use this and wish I had been clever enough during Thanksgiving! But no worries, I still have time with Christmas – and I can utilize these Zesty Chicken Salad appetizers as they are red, white, and green!

From football tailgating to holiday entertaining, cranberry horseradish for the win.

Cranberry Horseradish

I discovered that Silver Spring Foods is the largest grower and processor or horseradish.

It all began in 1929, deep in the heart of Wisconsin, when founder Ellis Huntsinger started growing horseradish and other small vegetables on a few acres.

With four generations of family having led Silver Spring Foods (and Huntsinger Farms, Inc.), it is an American company through and through.

I’m still learning all the different ways to incorporate horseradish into my dishes. My family loves me for it too, as they tend to have a spicier palate than I do. Surprisingly, adding horseradish to my chicken salad wasn’t too spicy at all for me – love it!

Zesty Chicken Salad Appetizer Recipe

Zesty Chicken Salad recipe

Ingredients

1-can cooked chicken (12.5 oz)
3-4 green onions, chopped
1/2 cup mayonnaise
1 Tbsp Italian seasoning

Prepared phyllo shells
Silver Spring Foods Cranberry Horseradish
Fresh parsley

Directions

Heat oven to 350 degrees (or follow ingredients on your prepared phyllo shells package, if it differs).

In large bowl, empty can of cooked chicken. Using fork, shred the chicken to separate all the pieces.

Add in chopped green onions, mayonnaise, and Italian seasoning. Stir with fork until blended.

Place empty phyllo shells on baking sheet. Bake for 3-5 minutes (or as directed on your package). Remove from oven.

Scoop chicken salad into each phyllo shell.

Spoon a small amount of cranberry horseradish on top the chicken salad in each shell.

Place a small piece of parsley atop the horseradish.

Serve.

Voila. Your tastebuds will thank you.

    I’ve never actually tried cooking anything with horseradish – only ever had it as an accompaniment to beef. I’m feeling inspired to experiment a bit more with it, though, because I do love it!
