Today, I’m sharing my Loaded Corn Dog Muffins recipe.
It’s that time of the year when my husband and I have to communicate a little better. Not only is it football season, but it’s that time when things get REAL – the playoffs.
Communicate?
Yes, we have to check in with each other so that our weekends go smoothly. It’s helpful when he reminds me which games are a must-watch for him, so I don’t plan on us cleaning out the garage at that same time or having a date night! Catastrophe!
Checking in with each other also helps me prepare for some Game Day fun. Whether we are inviting a few friends over to watch the game or just having some family time cheering on our favorite team (we are loyal fans), you can count on some “Homegating” going on!
Homegating?
I’ve famously written about how so many of my friends use the term “tailgating” incorrectly. Having stood outside in a stadium parking lot in a foot of snow before a game, I know firsthand what tailgating is and is not.
Hosting a football watching party in your home? Enjoying guests while the game plays on the big screen? Now I call that “Homegating”…and there’s nothing like it.
Homegating Made Easy
Now, truth be told, Homegating can be as intricate or as simple as you’d like it to be. For me personally, I love to entertain, but I also want to be sitting in front of the television enjoying the game. Anytime I can make things easier for myself I will, and I have a few snack hacks that are easy and will impress your guests.
Where do I start? I head to Kroger where I’ll find some favorites that make Game Day much easier… Ball Park® Hot Dogs and Wright® Brand Bacon (both in the refrigerated section) and Tyson® Any’tizers® like Chicken Fries or Boneless Chicken Wyngz (in the frozen section).
Loaded Corn Dog Muffins
Who doesn’t love a corn dog? It’s an American classic, found at state fairs each fall and craved year-round.
Many I know make a kid-friendly snack of corn dog muffins to please little ones everywhere, but who says corn dog muffins are just for kids? Let’s make them for our Game Day parties, and more grown up!
Loaded Corn Dog Muffins – A simple snack hack for the grownups!
Ingredients:
1 ½ cups yellow cornmeal
1 cup sifted all-purpose flour
2 eggs, beaten
12 tablespoons unsalted butter (equals 1 ½ sticks)
1 ½ cup milk
1 tsp salt
1 tablespoon baking powder
⅓ cup sugar
4 Ball Park hot dogs, cut into thirds
6 Wright brand bacon slices, cooked and crumbled
3-4 green onions, chopped
½ cup sharp cheddar cheese, grated
Directions:
Preheat oven to 400 degrees.
Prepare a muffin pan by spraying with non-stick cooking spray.
In large bowl, combine the cornmeal, flour, salt, sugar and baking powder.
In separate medium bowl, combine and mix milk, butter and eggs.
Pour the milk mixture into the cornmeal mixture until moistened.
Stir in bacon slices, green onions and cheddar cheese, gently until throughout mixture.
Spoon the batter into the muffin pan (approx ⅔ full).
Place one uncooked hot dog piece in the middle of the each batter section. (Remember that you have cut each hot dog into three pieces.
I choose Ball Park hot dogs because as a lover of food, the taste reminds me of the hot dogs at the baseball and football games. Always has, ever since my mom started buying them when I was younger. As a mom and wife I choose Ball Park hot dogs because they are 100% beef and have NO nitrates/nitrites or artificial preservatives!
Bake approximately 18-20 minutes.
Remove from oven and cool at least 5 minutes before removing from pan. (Note: Many of my hot dog pieces shifted during baking, so not all will be perfectly centered)
Serve immediately and refrigerate any leftovers (if there are any, because let’s be honest, at a football watching party, they’ll be gobbled up before you know it).
