Sweethearts Cracker Toffee

I’ve been in the kitchen today preparing for Valentine’s Day….and my family is loving it!

On the menu – Sweethearts Cracker Toffee using the traditional Valentine’s candy from my childhood – Sweethearts.

While toffee can be traditionally “hard” to eat, by using crackers, it has made this recipe easy for everyone to enjoy.

Sweethearts Cracker Toffee

Ingredients:

Crackers – I used Keebler’s Club original rectangle-shaped crackers
1/2 cup unsalted butter
1/2 cup packed brown sugar
1/8 tsp salt
1 cup semisweet chocolate chips, coursely chopped
Sweethearts Candies (some candies kept whole, 1/3 cup candies crumbled – I pounded while in plastic zipped bag)

Preheat Oven to 375 degrees.

Line 9″ x 11″ baking dish with aluminum foil. To avoid sticking, spray with nonstick cooking spray (directly onto foil).
Arrange crackers in baking dish next to each other, filling in any gaps with cut pieces, if you want.

Combine in saucepan: butter, brown sugar and salt. Cook over medium heat, stirring often, until butter melts. Then, bring mixture to a boil over high heat. Boil for approx 3 minutes…..DO NOT STIR at this point. TIP: If you see the mixture start to burn, you can take it off the burner and proceed to next step.

Immediately pour mixture evenly over crackers and spread to cover it all.

Bake for 5 minutes in pre-heated oven.

Immediately sprinkle chocolate chips over crackers. As the chocolate chips melt, sprinkle crumbled Sweethearts candies. Place whole Sweethearts candies in select locations, pressing down into the melting chocolate.

Cool to room temperature.

Refrigerate (after enjoying a quick bite) for 1-2 hours. Break into pieces for serving!
