To say it’s COLD outside is an understatement. But since we can’t ignore the weather (and yet want to stay indoors), I thought we would bring a little of the outdoors in…..with these Simple Snowman Cupcakes. How about let’s throw in some nice warm cocoa too?
The Cupcake – HOT CHOCOLATE CUPCAKE
Bake packaged chocolate cake mix (or your own recipe) as indicated
BUT add small or mini marshmallows to the chocolate cake batter
Let Cool Completely
The Frosting – Simple White Icing
The Decorations – Marshmallow Snowman
Scarf – Place a small amount of frosting on top of the cupcake to attach the large marshmallow. (Tip: You might also want to prop it up from the back with a pretzel stick if it won’t stay upright). I chose orange so that the frosting would double and look like a scarf.
Arms – Place small stick pretzels in the cupcake to act as the snowman’s arms.
Hat – We used peppermints and gumdrops (these were flatter than the usual shape I see) – attached with frosting
Face – Pipe frosting (different colors) to make any type of face you want. TIP: If you don’t have a piping bag, simple make one using a Ziploc bag. Cut the end of one corner real small and then fill the bag with frosting and use the cut corner for the frosting to pipe out of.
Have fun – the possibilities are endless!
